Easy Cake Mix Poppy Seed Bread
Every summer my family and I went to visit my Dad’s side of the family in North Carolina. Every time we visited my grandmother's house, she would make the most delicious bread. It was warm, soft, moist, and perfect in every way. I used to think she spent hours crafting her homemade bread. In reality, it only needed butter pecan cake mix, coconut instant pudding, poppy seeds, and a few other things easily found in any kitchen. The only time-consuming thing about this recipe is the cooking time, which is not at all shortened by the delicious smell of the baking bread. While my grandmother has long since passed, this recipe offers a chance to remember her and her memory.
Supplies
- 1 box butter pecan cake mix
- 1 package coconut instant pudding
- 1/2 cup oil
- 1 cup hot water
- 3 eggs
- 1 tbsp poppy seeds
- Crisco
- Wax paper
- 2 loaf pans
Prep
The directions are extremely simple. First, Just preheat your oven to 325° and gather your ingredients.
Mixing
While you wait for the oven to heat up, throw a box of butter pecan cake mix, a package of coconut instant pudding, 1/2c of oil, 1 cup of hot water, 3 eggs, and 1 tbsp of poppy seeds into a bowl and stir for two minutes.
Baking
Once that’s done grease two loaf pans with Crisco, line them with wax paper (just enough to cover the bottom with the extra on the edges). Divide your batter evenly between the two and pop them in the oven for 45 minutes.
Done!
Once the pans have cooled down, remove the loaves, (I find it easiest to flip your pans upside down and left the loaf fall into your hand) slice them, and enjoy your deliciously easy bread!
