Easy Biscuit Sandwiches
This was a lunchtime improvisation that has become a big hit at my house. They don't take much effort to make, and they are pretty quick. The best part is that you can change the ingredients around and do your own variations based on what you like or what you have available!
What You Will Need:
For my version, I used these ingredients:
1 can of quick biscuits (Pillsbury Grands or something similar)
4 slices of turkey
4 slices of american cheese
24 slices of pepperoni
Just a word of caution, I use american cheese because it melts fairly easily and it doesn't generate a lot of grease in the process. I've tried mozzarella (can be difficult to melt) and I've tried cheddar (can get very greasy). If you want to substitute your own cheese, I'd go with something semi-soft.
I used these tools:
Utility kitchen knife
Cutting board
Cookie sheet
Making the Biscuits
Start off by making the biscuits according to the directions. While they're baking, get the rest of your ingredients out. Take the cheese slices, fold them in half, then fold them in half again. Each slice should yield four small squares. Take your turkey and cut each slice in half.
When the biscuits are done, remove them from the oven. Don't turn the oven off, yet. Cut each one in half and open them up (see Figure 1).
Take two pieces of cheese and place them on the top part of the open biscuit (see Figure 2).
Take three slices of pepperoni and place them on the bottom portion of the biscuit (see Figure 3).
Take a slice of turkey and place it on top of the pepperoni (see Figure 4).
Take the top half of the biscuit and stack it on top of the bottom half.
Back Into the Oven
Take all of your biscuits and put them back into the oven for two minutes. This is really only to melt the cheese a little more. The heat from the cooked biscuit will melt the cheese a tiny bit, but not enough in my book.
After the two minutes is up, pull them out of the oven. They're done!
