Easy, 60 Second Mug Cake (no Eggs)!

You know those nights when you're burning the midnight oil working from home or studying for a test (or bingeing the newest fleeting Netflix original) and you get that sudden, unrelenting craving for a treat? This super easy mug cake is sure to satisfy your sweet tooth and can be made with ingredients you already have in your pantry. It also only takes one minute to make so you can be sure you get back to Squid Game before it becomes obsolete.

Supplies

Supplies

  • One 14-oz microwave-safe mug
  • Measuring cups (1/4 cup)
  • Measuring spoons (Tablespoon, 1/4 tsp & 1/8 tsp)
  • Fork or small whisk

Dry Ingredients

  • 1/4 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 2 tablespoons granulated sugar (plus more to taste)
  • 1/8 tsp kosher salt

Wet Ingredients

  • 1/4 cup + 1 tablespoon milk
  • 2 tablespoons vegetable oil
  • 1 tablespoon peanut butter or hazelnut spread (Optional)

Measure Out Dry Ingredients

Measure out 1/4 cup flour, 2 tablespoons sugar, 2 tablespoons cocoa powder, 1/4 tsp baking powder, and 1/8 tsp salt and place in a 14-oz microwave-safe mug.

Combine Dry Ingredients

Using a fork or whisk, whisk the dry ingredients until well combined.

Add Wet Ingredients

Measure out and add 1/4 cup + 1 tbsp milk and 2 tbsp vegetable oil directly to the mug.

Combine Wet and Dry Ingredients

Whisk the wet and dry ingredients together until well combined and the batter has no clumps.. Be sure to scrape the bottom of the mug to get rid of any dry patches.

Add a Filling (Optional)

If you want a gooey, lava-cake-like filling to your mug cake, you can add hazelnut spread or peanut butter to your batter. I am using peanut butter, for obvious reasons. Dollop a tablespoon of the filling of your choice in the center of your batter and use a fork or spoon to help it sink in the batter a little.

Place Mug in Microwave

Place your mug on a microwave-safe tray. If you are using a smaller mug, it might be a good idea to cover your mug with a paper towel to prevent spills.

Microwave for 60 Seconds

Microwave your mug for about 60 seconds. You may need to adjust the time depending on the wattage of your microwave.

Check for Doneness

Once you've waited patiently for your mug to finish cooking, be sure to check the top of your cake for doneness. If you see large, wet-looking spots on the top of your cake, pop it back in the microwave for another 5-10 seconds.

Add Toppings (Optional)

If you're still looking for some extra sugar, add toppings such as ice cream, whipped cream, or chocolate sauce (or all of the above) to your mug cake. Get creative! No judgments here.

Let your cake cool for a minute or so (if you can) as it will be hot right out of the microwave. Carefully remove from microwave and enjoy!
