Easy 3 Ingredient Ice Cream!

Ice Cream is one of the best treats for a hot day! At least it is in my opinion... The rich creaminess mixed with the coldness makes ice cream an awesome treat for a hot day! So let's get started because it's only getting hotter outside!

Supplies

You're going to need:

  • 3 cups heavy whipping cream
  • 1 cups granulated sugar
  • 1 vanilla bean

As well as:

  • A stand mixer fitted with a whisk attachment
  • A pyrex bowl with a lid

Whipping Cream

Pour whipping cream into the bowl of your stand mixer, then whip on high for a few minutes, or until soft peaks begin to form. And make sure that you're using the whisk attachment (like in the photo above) and not a paddle attachment! Otherwise you're not going to make much progress ;)

Sugar and Vanilla Bean

Add the sugar to the whipping cream, then whisk. To add vanilla bean, carefully slice the bean down the center with the tip of your knife, cutting halfway, but not fully through it. Then open the bean up and carefully run your knife across the inside, getting out all the good stuff! Or, if you don't have vanilla beans, use a tablespoon of vanilla extract. Then thoroughly whisk together until the heavy whipping cream has formed stiff peaks.

Transfer

Transfer the cream to a bowl with a lid, then smooth out the top with a spatula. Cover with a lid and then stick in the freezer for a few hours, or until fully hardened!

Scoop and Serve!

Once it's fully hardened, scoop and serve either with cones or in bowls! Since it's vanilla, it goes pretty good with anything, so have fun adding fudge or caramel to the top, or just eating it plain! Enjoy!
