Earl Gray Banana Bunt Bread!

I love early gray tea AND banana bread then I came upon this recipe which combines both! Here's my take at it (with a handful of modifications). Nom nom nom

Gather Your Ingredients

Start by gettin' all the goods together., preheating your oven to 375 F, and greasing/flouring your bunt pan. (This recipe can also be used for a bread loaf or muffins.

Ingredients

- 1 cup of boiling water

- 3 bags of earl gray tea

- 3 cups of flour

- 1 cup of sugar

- 2 teaspoons of baking powder

- 1 teaspoon of baking soda

- 1 cup of Greek yogurt (I like the honey variety but plain or vanilla works just as well)

- 2 smashed overripe bananas

- 3 eggs

- 2 tablespoons of vanilla

- confections sugar for the top

Seep Some Tea

Seep two tea bags of earl gray tea in 1 cup of boiling hot water for 10 minutes. Remove the bags and let the tea cool for another 10 minutes. **Optional: add 1-2 teaspoons of milk to your tea**

Mix Together Your Wet Ingredients

Start by mixing the yogurt, sugar, and bananas until creamy. Next add the eggs and vanilla until well mixed. Finally add in your cooled tea and mix until well incorporated. The batter should be super watery at this point.

Next for the Dry Ingredients.

In a large bowl mix the flour, baking soda, baking powder, and salt. Slowly add this mixture to the wet ingredients. Finally, open up the final tea bag and stir in the tea leaves directly to the batter just until combined. The add the mixture to your baking container of choice!

Enjoy the Fruits of Your Labor, Especially With Some Vino!

If baking a bunt, bake for 50-60 minutes until golden brown and a toothpick inserted in the center comes out clean. Let cool for 10-15 minutes and dust with a healthy amount of confectioners sugar. Finally cut a piece and enjoy! As always, I encourage celebrating with a nice glass of vino (or two). Happy baking!
