Dutch Style Blueberry Pie

We had a bumper crop of blueberries in December & January, we froze most of them, so we can have a year long supply. Also, so that we can have blueberry pie all year round. This recipe is my mothers, who is originally from the Netherlands. She migrated to New Zealand when she was 4 years old.

Supplies

4oz or 115grams softened Butter

2/3 Cup Sugar

1 egg

2 teaspoon of Baking Powder

2 Cups White Flour or Gluten free flour mix

  1. Add the softened butter and sugar to your mixing bowl and cream together until they are fluffy.
  2. Add 1 egg and mix well.
  3. Add Baking powder and flour and mix until it forms a wet dough.
  4. Butter your tray and press 2/3 of the dough into your tray to form the base.
  5. Place your blueberries on the base and sprinkle with cinnamon and sugar.
  6. To create the top, take small amounts of dough and press flat into irregular shapes. If dough is too wet ,coat your fingers with flour to stop it sticking to your fingers.
  7. Place irregular shapes on top of the blueberries.
  8. Cover all the tray with your dough shapes, leaving gaps. Cook at 170 degrees Celsius or 340 Fahrenheit on fan bake for 30 minutes.
  9. Let the pie cool before cutting up into slices. Coat slices with sifted icing sugar and eat with custard or ice cream.
