Dry Veg Kothu Paratha

This is a simple homemade dry veg kothu recipe.

Ingredients

- 1 medium onion, chopped

- 1 carrot, chopped

- 1 c frozen beans

- 1 c frozen peas

- 4 parathas, readymade or homemade

- ½ chilli, chopped

- Small piece of ginger, thinly cut

- ½ t turmeric

- 1 ½ t garam masala

- 1 ½ t coriander powder

- 1 t cumin powder

- 1 t chilli powder

- Salt to taste

- 2 t oil

- Water

- Lemon slice

- Yogurt

Prepare Parathas

Make the ready made or homemade parathas, and tear it up into small pieces.

Tip

- To make homemade parathas, add into a bowl plain flour, salt, oil and required luke warm water and mix to get a dough consistency. Let the dough rest for 2 hours. Then get small lime sized dough and roll out into thin circles. Then heat and lightly grease a flat pan and toss these rolled parathas on it, and remove it once both sides have brown dots on it and is cooked.

Prepare Vegetables

In a microwave safe bowl add the chopped carrot, frozen beans and peas and a little bit of water and boil for 8 mins or well boiled but not mushy.

Place a saucepan on the stove top over medium heat, and add the oil, and let it get slightly hot.

Next add in the chilli and ginger and saute for 30 seconds.

Next, add the chopped onion to the saucepan and saute until lightly pale (2 mins).

Slowly add all the spices, turmeric, garam masala powder, coriander powder, chilli powder, cumin powder and salt and stir.

Add the boiled vegetables into the sauce pan.

Stir all together and add a little bit of water and saute for 3 mins.

Next add the torn parathas into the vegetable mix and stir all together.

Let all the ingredients combine and let it remain over the heat for a further 2 mins, stirring occasionally.

Take it from the heat and transfer to a plate, serve with onion raita or plain yogurt, with a slice of lemon.

Tip

- To make the onion raita, just chop onions and add salt to it, let it rest for a few minutes then squeeze out the excess water from the onion, then add yogurt to the salted onion before serving.
