Dreamy Chocolate Coconut Covered Coffee Beans

Tired of spilling coffee on your work clothes?  Sick of hearing the secretary snore?  Make a batch of these delicious chocolate-coconut covered coffee beans to take to work and make your co-workers fall in love with you all over again!  (Beware, six of these little babies are equivalent to a cup of espresso.)

Ingredients

Grab 1/2 cup of your favorite coffee beans, a large chocolate bar and 1/2 cup of coconut flakes...(substitute 1/2 cup of chopped almonds for all you coconut-haters...and substitute more chocolate for all you nut-haters.)

Melt Chocolate and Mix

Place broken chocolate pieces in microwave-safe bowl and heat on medium for 30 seconds or until melted.  Stir in most of coconut flakes (or chopped almonds) and coffee beans.

Fill Ice Cube Tray

Grab an ice cube tray.  The ones that makes smaller cubes create daintier pieces, but larger trays pack more of a caffeine punch as they will hold more beans.  Sprinkle coconut flakes (or almonds) into tray, then pour and press down chocolate mixture firmly into tray. Top with more coconut flakes (or, yes, almonds) and press again with spoon.  Cover with plastic wrap and pop in freezer for one hour.

Eat!

Take out of freezer and remove from ice cube tray.  You may need a knife to gently remove them.  Enjoy!
