Double Decker Bread Pizza on Stovetop
Luscious cheese filled, crusty and delicious double decker bread pizza made on a stove top! With lots of cheese, vegetables and a homemade sauce (you can use store bought too!), this is my take on a bread pizza with double the fun; double the taste and made on a stove top! No yeast? Oven not working? This cheesy bread delight will satisfy all your pizza cravings without using any of these!
With basic pantry ingredients everyone has, time to make this easy, peasy double decker bread pizza on a stove top!
INGREDIENTS:
8 slices of soft, fresh bread (white or wheat, but make sure it is fresh and soft)
4 slices of cheese
½ to 3/4 cup mozzarella or processed cheese
1/3 cup chopped mushrooms, or as needed
1/3 cup chopped bell peppers, or as needed
¼ cup chopped red onions
Dash of crushed red chili
Dash of Italian seasoning
Butter for greasing the pan
FOR HOMEMADE PIZZA SAUCE:
5 large tomatoes
1 large onion
1 green chili/jalapeno/serrano
2 to 3 medium sized garlic cloves
½ teaspoon dry oregano leaves
½ teaspoon Italian seasoning
Salt to taste
TO MAKE THE PIZZA SAUCE:
Blend all the tomato sauce ingredients to a smooth paste and then transfer to a large saucepan.
Add herbs, salt and a dash of sugar, mix well and bring to a boil.
Once it comes to a boil, lower the heat and simmer until the sauce is slightly thick. Let cool.
TO ASSEMBLE THE DOUBLE DECKER BREAD PIZZA:
Remove crusts from bread slices.
Now, take 4 slices of bread and keep them next to each other to make a large square.
Using a rolling pin, roll gently to flatten slightly.
Now, wet the edges of the bread slices lightly at the center of the square and place one over the other along those edges to allow for sealing.
Now, gently press again to overlap and seal the edges. Roll the whole square of bread slices again gently.
Do not press too much as this forms the base of this pizza.
All I had was some factory baked wheat bread which was a bit crumbly (due to lockdown and pandemic!); next time it is the neighborhood bakery fresh bread; soft and easy to roll!
Now, place 4 slices of cheese over each bread slice.
Again, seal 4 more slices like mentioned above and place over the cheese slices.
Make sure the slices are aligned one above the other.
Next, spoon a few tablespoons of pizza sauce over the bread base and gently spread all over up to the edges.
Sprinkle some cheese over the sauce.
Top with the chopped vegetables and some more cheese.
Sprinkle Italian seasoning and red chili flakes.
Now, heat a large, flat saucepan or flat griddle on medium heat.
Melt some butter over it and spread all over. This is optional but gives a lovely crusty bottom.
When the pan is hot, gently transfer the assembled double decker bread pizza over it using 2 flat spatulas or pancake turners.
Turn the heat down immediately to low to medium low; we need a slow heat to brown the bottom as well as melt the cheese in between the slices as well as top.
Cover the pan and heat on low heat until the cheese is melted.
Make sure to keep the heat on low to medium low so as not to burn the bottom of this bread pizza!
Remove the lid or cover when the cheese has almost melted and pizza is cheesy, turn the heat off.
Remove from pan on to serving plate.
Cut into square slices and serve immediately!

NOTES:
Make sure to use only soft, fresh bread which can be rolled easily without it becoming crumbly as when dry! Due to lockdown, I could get only this factory made brown bread which was a bit dry to my liking to make this!
Next time, it will be freshly baked neighborhood bakery bread!
Use homemade or store bought pizza or even pasta sauce. Why, you can even use pesto sauce too!
Top with your choice of veggies but make sure they are chopped fine so as to cook easily.
