Double Chocolate-Pecan Cookies
Do you have a Chocoholic in your life? These cookies are so delicious and they just melt in your mouth. I have been making them for several years and have received many positive comments.
This recipe makes 5 dozen cookies.
Supplies
To make these cookies you will need:
2 cups flour
1-1/2 cups oatmeal
1 teaspoon baking powder
1 teaspoon salt
2 sticks butter (do not use margarine)
1 teaspoon vanilla
1/2 cup cocoa powder
1 package (12 oz) semi-sweet chocolate chips
1 cup chopped pecans
1/4 cup water
2 eggs
1 cup granulated sugar
1 cup powdered sugar
Melt the Butter
In a saucepan, on low heat, melt 2 sticks butter. (Do not use margarine) Stir in 1/2 cup cocoa powder. Set aside to cool.
Pre-heat the oven to 350 degrees.
Flour Mixture
In a large mixing bowl blend 2 cups flour with 1-1/2 cups oatmeal. Add 2 tsp baking powder and 1 tsp salt. Stir well.
Mix Eggs With Sugar
In a separate bowl, mix 2 eggs with 1 cup granulated sugar and 1/4 cup water. Blend well.
Combine Ingredients
Pour the egg mixture into the flour mixture and using an electric mixer, mix on low speed for 2 minutes, SLOWLY adding the cooled chocolate/butter mixture. Add the vanilla and stir well.
Add Chocolate Chips and Pecans
Stir the chocolate chips and pecans into the cookie dough using a large wooden spoon.
Shape Cookie Dough
Roll a ball of dough about the size of a walnut, coat it in powdered sugar and place on cookie sheet., pressing down slightly so they don't roll around.
If you place the rolled up cookie dough on the cookie sheet as pictured, you will be able to bake 13 cookies per batch! This is known as a Bakers Dozen!
Bake
Place the cookie sheet in the oven and bake for 10 minutes. Remove from the oven and place cookies on a wire cooling rack. This recipe makes 5 dozen cookies. Place cooled cookies in a sealed container. Enjoy!
