Double Chocolate Lava Cakes

Me and my group members are students in the culinary arts program at our school. We made a lava cake with a chocolate strawberry topping. The purpose of this dessert is for the chocolate contest, this recipe is simple and sweet. Even though this creation did not turn out how we planed we posted it to show that even when things don't turn out as expected the outcome can be amazing!

Supplies

you're going to need :

  • 2 rubber spatula
  • 1 microwave safe bowl
  • 1 glass bowl
  • 1 medium sauce pan
  • 1 small bowl
  • 1 large mixing bowl
  • 1 small mixing bowl
  • Ramekins or cupcake tins
  • Parchment paper
  • Wax paper
  • Whisk
  • 1 baking sheet


Ingredients you will need :

  • 6 ounces of semisweet chocolate
  • 1/2 cup of unsalted butter
  • 1/4 cup all- purpose flour
  • 1/2 cup confectioners sugar
  • 1/8 tsp salt
  • 2 large eggs
  • 2 large egg yolks
  • 3 cups milk chocolate chips
  • 1 pint of strawberries

Make the Batter for the Cakes

ingredients :

  • 6 ounces of semisweet chocolate
  • 1/2 cup of unsalted butter
  • 1/4 cup all- purpose flour
  • 1/2 cup confectioners sugar
  • 1/8 tsp salt
  • 2 large eggs
  • 2 large egg yolks


Spray your ramekins or cupcake tins with non-stick spray

Preheat your oven to 425 degrees F ( 218 degrees C )

Finely cut up your chocolate the put it into a microwave safe bowl with your butter ( heat until melted )

In a large mixing bowl whisk flour, confectioners sugar, and salt

In a separate small bowl put two eggs and two egg yolks. whisk them together

Add the egg mixture and the chocolate mixture to your dry ingredients in the large bowl. Mix them together with a rubber spatula. ( use a whisk to get rid of any lumps )

Add batter to your ramekins or cupcake tins

If in a ramekins bake for 12-14 minutes and if in a cupcake tin bake for 8-10 minutes

Make the Chocolate Dome and Strawberries

Ingredients :

  • 3 cups milk chocolate chips
  • 1 pint of strawberries

When making the strawberries and balloon you need to do a method called a double boiler

A double boiler is when you take a pot of water, bring it to a boil, and put a glass bowl on top of the pot where you put the thing you want to melt. Doing this prevents the chocolate from cooking ( if you put it in the microwave ) instead it melts it.

Lay down parchment paper on a baking sheet

Add the chocolate to the double boiler and stir occasionally

Once completely melted dip your strawberries in and lay them on the parchment paper

When doing the balloon you should substitute it with a bowl and wax paper, we tried to do the balloon way and it stuck to the balloon once it was done chilling and the chocolate broke. With a bowl and wax paper it is easier to peel off and it will have the bowl form.

Either way you chose you should freeze the bowl for 2-3 hours

Refrigerate the strawberries till the chocolate is hard.

Assemble the Cakes

After you take the cakes out of the oven take the cakes out of the cupcake tin and put them onto a plate

Once the chocolate is hardened put a strawberries on top of the cake ( this is where you also put the chocolate dome over the cake but ours did not come off of the balloon so we took a chocolate piece and put it on top of the cake )

What the dome should do is be melted by chocolate that's poured on top and it melts over the cake, we did not have that success but that's okay the cake was still amazing!!
