Double Chocolate Brookies



Welcome! Here's the best recipe for how to make the most fudgy and delicious brookies. 🍫🍫🍫
This serves around 20-25 large cookies, depending on how large you roll them.
It's simple, quick (taking only 30 minutes) and gives great results time after time. 💯
As usual, the better quality ingredients you use, the better the final result will be. However, these brookies can still be made as a cost-effective treat. 😎
Without further ado, let's begin!
Supplies

Here's what you'll need:
- A mixer (either a hand-held electric mixer or a stand mixer with the paddle attachment)
- A large bowl
- A medium size bowl
- A rubber spatula
- An oven (be careful, get adult supervision if young)
- 2-3 large baking trays
- Baking paper
- Scales
And the ingredients are:
Dry ingredients:
- 2 2/3 cups of plain/all purpose flour (320g/11.7oz)
- 1/4 tsp of bi-carb soda (aka baking soda)
- 1/4 tsp of baking powder (if you like really dense, fudgy brookies, you can leave the baking powder out)
- 1/2 tsp of salt
- 1 tsp corn flour (aka cornstarch, this adds extra chewiness along with the eggs!)
- 2/3 cup of unsweetened cocoa powder
Wet ingredients:
- 225g (8oz) of room temperature butter (if you like thicker brookies, use cold butter - not freezing though!)
- 3/4 cup (150g/5.3oz) of white granulated sugar
- 3/4 cup (150g/5.3oz) of brown sugar
- 2 eggs (this number of eggs makes all the difference!)
- 80g of melted milk/dark chocolate (you can use a block of chocolate or chocolate melts for this one)
- 1 1/2 tsp of vanilla extract
- 1/2 cup of white chocolate chips
- 1/2 cup of chocolate chips/chocolate chunks of choice (Our favorite is milk chocolate chips, but feel free to add whatever!)
Optional: add in 1/2 cup of hazelnuts to add a different flavor to your brookies!
Alright, now let's get into the creaming stage!
Preheat Your Oven & Sift the Dry Ingredients

- Firstly, preheat your oven to 177 degrees Celsius (350 degrees Fahrenheit). Adult supervision recommended if you're still young.
- Line two or three large baking trays with either silicone baking mats or baking paper.
- Next, put 2 2/3 cups of flour and 1/2 tsp of salt into a medium size bowl.
- Then sift in 2/3 cup of cocoa powder, 1 tsp corn flour, 1/4 tsp of bi-carb soda and a 1/4 tsp of baking powder.
- Give it a quick whisk, then set it aside.
Creaming the Butter & Sugars



- Grab your mixer - either the stand mixer with the paddle attachment or a hand-held mixer.
- Add in the 225g of butter, 3/4 cup of white sugar and 3/4 cup of brown sugar. Beat on low speed until it starts to come together (30 seconds or so), then turn up to medium speed until fully combined and creamy (about 2 minutes).
- Using a rubber spatula, scrape down the sides of the bowl as needed, to ensure every thing gets properly mixed in.
- Add in the two eggs (for structure and chewiness), and the 1 1/2 tsp vanilla extract. Mix well.
- Chocolate time. Pour in the 80g of melted chocolate and mix well.
Combining the Wet & Dry Ingredients



- Slowly pour the dry ingredients into the wet ingredients in two lots.
- Mix on low speed until *just* combined. If we mix it too long, the cookies will turn out tough - and that's not what we're going for!
- Add in the 1/2 cup of white chocolate chips and 1/2 cup of milk chocolate chips. Mix on low speed until just combined.
- We're ready to go!
The Cookies Take Shape


- Scoop cookie dough into roughly two tablespoon balls and place on the trays. Leave some room for them to spread.
- Place them into the oven, letting them cook for around 12-15 minutes. If you like them gooey and fudgy, take them out a little early, and if you like a good crispy edge, leave them in for a bit longer. The general test to see when they're done is if you can turn the cookies around on the baking mat while they *just* hold together.
- After leaving them for a couple of minutes to cool (careful, they're hot), move them onto a cooling rack to cool further, for around 5-10 minutes.
