Dorm Room Cooking: 10 Minute Healthy Blueberry Scone

Finding ways to make meals in a college dorm is tricky, especially if you dont have a kitchenette, which I dont. I've gotten pretty bored of oatmeal, and one can eat only so many nutela-banana sandwiches. A couple weeks ago I made these dessert bread-bar things out of mainly oats and protein powder, so this morning I tried to make something similar without an oven, using my microwave. It actually turned out pretty good!


Ingredients:

1/2 Cup Quick Cook Oats
3/4 Scoop Vanilla Protein Powder
3 Tbs Ground Flaxseed 
1/3 Cup Frozen Blueberries
1/4 tsp. Baking Powder
Water
Optional: Sweetener


Directions:

In a [very] microwavable bowl, mix together all dry ingredients, and add just enough water so it combines. Then add a little bit more. Stir in your blueberries and microwave on medium-high for 5 minutes. 
Separate the oatmeal chunk from the sides of the bowl with a spoon, and then flip out the chunk onto a paper plate so it's upside down. Microwave again on medium-high for 2-3 minutes for a gooey scone, 3-4.5 minutes for a crunchy scone.
Let it cool for a couple seconds, and enjoy!

Switch out the blueberries for bananas, nuts, chocolate, peanut butter, or your favorite add-ins.
