Doggie Blueberry Pie

If you have a backyard like me, overflowing with wild blueberries, you have to think of fun ways to use them up. So, I made my dogs a little pie out of their favorite snack, BLUEBERRIES🫐 It's so easy & made with clean ingredients you will probably want to try it 😉

Supplies

  • Six inch pie pan
  • Blender or food processor
  • Rolling pin
  • 2 cups old fashioned oats
  • 2 Tablespoons cold coconut oil
  • 1/8th cup water
  • 1 1/2 blueberries
  • 1/2 Tablespoon corn starch

Make Pie Crust

  • Put your two cups of old fashioned oats in the blender or food processor and blend until you get oat flour
  • Add your cold coconut oil to the oat flour and blend
  • Add your water to the oil and flour mixture, pulse & scrape down the sides until a dough ball forms, you may need to add a little bit more water

Roll Your Dough

  • On a lightly floured surface roll your dough ball to a quarter inch thickness
  • Transfer dough into the pie pan and trim the overhang edges (save extra for later)
  • Place your crust in the freezer and preheat your oven to 350 degrees Fahrenheit

Mix Blueberries

  • Add 1/2 Tablespoons of cornstarch to your 1.5 cups blueberries, mix well to coat the blueberries

Cut Lattice Strips

  • Take your extra crust and ball it up
  • Roll it out on a lightly floured surface a little thinner than quarter inch thickness
  • Cut into half inch strips

Lattice Your Pie

  • Take your pie crust out of the freezer and fill it with your coated blueberries
  • Start with three strips of crust across your filling
  • Lift every other strip to place your first lattice, mirror the process to the other side
  • Continue until your lattice is complete
  • Trim off the excess overhang

Bake Your Pie

  • Once your oven is preheated, place your pie on a baking sheet in the oven
  • Cook the pie for 45 minutes

  • Take your pie out of the oven, let cool completely! You can pop it in the fridge to speed up the cooling process
  • Serve to good dogs only (there are no bad dogs🤪)
