Dixie Dynamite

Ham, cheese and pulled pork..... whats not to like ! This long time favorite started out like a lot of sandwichs with leftovers, for the original I started with garlic toast, deli ham and american cheese with left over pulled pork, wrapped in tinfoil, I "cooked" them on the exhaust manifolds of the car. The wraps came in when I needed something to take to a party which is also where they got the name.

well I could make each ingredient a different step but then I'd need to come up with a name for each step, so lets condense it .
take a portion of pulled pork that your going to use, add some bbq sauce, cover the bowl with a paper plate and lay out your tortillas, pop them in the microwave for about a minute
take one of your warm tortillas and add a layer or more of sliced deli ham, a healthy helping of shredded cheese, now add a nice layer of pulled pork, top it all with more bbq sauce and your favorite hot peppers (optional)
Now roll it up and wrap in aluminum foil

Like I said at the start, the original was cooked on the car manifold but since then I've made them on the grill, in a smoker, a toaster oven and rocks next to a bonfire so the method of heating is really up to you. A light browning on the outside is good but not necessary as long as everything is heated through and the cheese melts

I enjoy a lot of styles of BBQ sauce, from the vinager based to tomato and mustard based, this is really a combination of all and was originally created by being frugal. Most BBQ shacks give you lots of bbq sauce for takeout, I didn't want to throw out the leftovers but those little plastic cups dont store well. I had an almost empty yellow mustard bottle that I thought what the heck... after adding the bbq sauce to the mustard I tasted the result, not bad but... a little more vinager, some more yellow and dark spicey mustard and finally a bit of hot sauce..hhmmm thats not bad at all ! Since that original idea Ive also made "the sauce" with bottled tomato based bbq sauce. Sorry there are no measurements, its all by taste
Variations
I've shown you a wrap, the original was on toasted italian bread with garlic butter, use a hard roll and its almost a cuban.
I used shredded chedder here but slices of swiss or pepper jack work great, even american cheese in a pinch.
