Dill (Pickle) Potato Salad
I am Weird. There, I said it. I feel better now.
I got in in my head late one winter to bury a rotting, eye-full potato in a big pot in our kitchen. In the fall, I had nothing... Here is what happened. Follow my steps and you'll have your very own bowl of Dill (Pickle) Potato Salad. Of course, you could cut out the long months of plant growth and buy the potatoes at the local grocery store to make it in about an hour, but I thought I'd give my process for anyone who wanted to follow it. BTW, I put it in poem form. I'm Weird that way. ;-)
Supplies
4-5 potatoes,
boiled whole until tender then diced
3-4 boiled eggs, diced
2-3 dill pickles, diced
1 small onion, diced (optional)
Mayonnaise or Miracle Whip
Mustard
Salt
¼ cup dill pickle juice
The Road to Fresh Potatoes
While making potato salad
At home one bright spring night
I came upon a growing spud
And got an idea light
I’ll cut this eyed potato
Into a piece or three
And plant them in a great big pot
What happens then we’ll see
So deep into the soil I
Buried all the eyes
And watered them for several days
Until to my surprise
The eyes began a-growing
In every little spot
Where I had buried little eyes
They grew and quite a lot.
I watered them so carefully
No more than once a week
I cared for them until they died
Not once but twice, I think.
But when I killed a third plant
I brought the pot inside
And set it by the window
Where it would slowly die
Then suddenly to my surprise
Up grew plant number five
This one grew and grew and bloomed
And actually seemed to thrive
Digging Them Up
On through the harshest winter
That we had had in years
The plant that died so many times
Lived on, so it appears
Up and up and up it grew
Until the freezing spring
I pulled up the winding plant
And set aside the thing
What would I find beneath the plant?
I dug into the mud
And found myself rewarded with
A tiny little spud
I found and dug up several more
All smaller than the first
They all fit neatly in my hand
My green thumb is the worst
Boiling Potatoes
All except the largest one
Went back into the soil
The large one went into a pot
Where it could cook and boil
Making the Mix
I diced it up with other spuds
And eggs that I had boiled
Mixed with some pickle relish
And mayo in a bowl
YUM!
The salad would be better
If I had bigger spuds
If this green thumb I didn’t have
Wasn’t such a dud.
The Recipe...
Now that you've heard the story
Whip some up yourself
But homegrown's not required
Just grab some from your shelf
(or bin, or box, or grocery store)
Dill (Pickle) Potato Salad
4-5 potatoes, boiled whole until tender then diced
3-4 boiled eggs, diced
2-3 dill pickles, diced (or dill pickle relish. 1-2 tablespoons should suffice)
1 small onion, diced (optional)
Mayonnaise or Miracle Whip
Mustard
Salt
¼ cup dill pickle juice
Mix everything together in a big bowl adding mayo and mustard till all potatoes are coated then salt to taste. Keep refrigerated until serving. You can also use sweet relish or pickles and 1 tsp of vinegar instead of the dill pickles and juice if that is your taste.
