Dill Pickle Popcorn

Growing up in Canada, my favorite party snack by far was Old Dutch Dill Pickle Chips. Now that I'm all grown up, I make an effort to keep to the healthier side of snack street, but I sure do miss that flavor, so I decided to try making a Dill Pickle Popcorn version! Nothing can replace the experience of fried crispy goodness, but this air popped impostor does a pretty fine job of filling in.

Spice It Up!

Blend the following in a spice (or clean coffee) grinder OR a combo of a small cuisinart and a mortar/pestle*:

1 TBSP coriander seeds
1/2 teaspoon mustard seeds
1/2 teaspoon dill seed

*If like me, you don't have a spice grinder, grind the seeds to a powder with a mortar and pestle before adding them to the cuisinart.

1 1/2 tsp kosher salt
1/2 tsp garlic powder
1/2 tsp onion powder
2 tsp dried dill
1/2 tsp citric acid (available at most health food stores or at the Vitamin Shoppe)

Set aside.

Pop & Butter

Make two rounds of air popped popcorn with approx. 1/2 cup of kernels per round = 22 cups of popcorn.

Mix 1/2 tsp of lemon juice into 2-3 TBSP of melted butter (or olive oil) and toss into popcorn.

Sprinkle & Shake

Sprinkle 1/2 of the spice mix over the buttered popcorn and toss well. Add the second 1/2 and toss/shake again! (This ensures even coverage.)

And presto! It's as if you were roaming the wilds of a kiddie Canadian birthday party... YUM!
