Preparing the Batter
Take 2 bowls of sooji in a container , add bowl of curd to it and 2 glasses of water to it and mix it then adds a spoonful of baking power and salt it. mix it well leave no lumps behind. Keep the batter a bit runny. Sooji will absorb the water and
the batter will become tight. We want to achieve a medium consistency i.e., neither to tight nor too runny. Now let it rest for 2 hours. Keep the batter in a warm place for 2-3 it will fermentate and lift after 2 hours.
Fermented food are really good for health and you should include it in your daily meal. It's good for weightloss, heart health and digestion.

Baking Cake and Cutting It
Mix the batter well again before use. Preheat the wok on the stove grease it with it any healthy oil you prefer(I used mustard oil). Now pour half of the batter in the wok. Cover the wok with a lid and let it cook for about 8 to 10 minutes on low flame until it's nice and red. Then turn it, cover it with a lid and let the other side cook too.cook it for 6-10 minutes. When it's nice and fluffy take the Sooji cake out of the wok on a plate and let it cool. After it has cooled down, cut it into square pieces.
Making Dhoklas
Take a wok, preheat it for 2 minutes on high flame. Now add 2 tbsp of oil and then add 1/2tbsp of mustard and 2 red chillies in hot oil.
After the mustard is nice and brown, add 2 chopped onions and cook it for 3 to 5 minutes.
After the onions are golden brown add curry leaves to it. Curry leaves are very good for your health and your hair. It's great if you could include it in every meal. Now, add the cut Sooji cake to it and mix it well. Let it cook for about 5 minutes. Now add 2tbsp of soya sauce, chilly sauc and tomato sauce to it. Mix the whole thing well and in the end, sprinkle rock salt ( to your taste) on it. Mix it well . Turn of the stove.
