Dhaba Style Egg Curry
Egg curry is quite popular in India and is made in several ways in different parts of the country. Some versions are very spicy! The recipe that I am sharing today is more or less of the egg curry that I grew up eating. For the curry base, I have used both onion and tomatoes, you may use tomatoes only. It will still be as delicious! Egg Curry is a deliciously rich onion tomato gravy, tastes exactly like the ones you get in dhabas. These are perfect with some rice or paratha and fresh salad on the side. This is a medium spicy dish. It is a go to recipe. we have made this recipe with a few ingredients and managed to keep Indian traditions alive with its amazing taste and concluded it in one pot challenge!

Preparation
- Boil Eggs.
- Make a Paste of 2 tomatoes.
- Make a paste of 2 onions.
- Cut potatoes into cubes.
Prep Gram Flour
- Heat a pot.
- Add 4 tablespoon of gram flour.
- Cook and sauté the gram flour till it turns slightly brown.
- Once done take out the gram flour, this will leave a nice aroma of gravy on the pot, which we will use for next step.
Fry Eggs
- Take the boiled eggs in a bowl and add 1 teaspoon of Turmeric and Red Chili Powder in it.
- Heat 3 tablespoon oil in the same pot used in last step.
- Add the eggs into the pot and fry them for 2 minutes till they turn slightly golden brown.
- Once done, take them out from the pot. ( Don't Remove the excess oil from this pot, since we will use it in next step.)
Curry Making
- In the same oil add 1 teaspoon of cumin seeds and let it pop.
- Add the onion paste cover and cook the onion paste for 2-3 minutes.
- Take the lid off and add 2 tablespoon of ginger garlic paste.
- Mix it well.
- Cover and cook for 2-3 minutes more.
Adding Spices
Add the following spices to the gravy, but remember this is an Indian dish, it will be spicy, so dial down spices according to your taste comfort.
- 1 teaspoon of turmeric powder.
- 2 teaspoon of coriander powder.
- 1 teaspoon of cumin powder.
- 1 teaspoon of Kashmiri red chili powder.
- 2 teaspoon of spicy red chili powder.
- Salt as per taste.
- 2 tablespoon of water.
- Mix everything well till the yellow gravy turn orangish red.
Add Tomato Paste
- Add the tomato paste in it. Mix well.
- Cover and cook for 5-10 minutes.
- Add the potato cubes and the gram flour.
- Mix everything well.
- Add 2 full cups of water and let it boil.
Adding the Fried Eggs
- Once you see the boil add the fried eggs we prepared in Step 3
- Add one teaspoon of garam masala powder
- Mix everything well.
Tada! Dhaba style egg curry is ready. Garnish it with finely chopped fresh coriander leaves. Serve hot and enjoy!
