Delicious and Quick Breakfast Potatoes

In this Instructable, I'll walk through the process of making easy 15-minute breakfast potatoes. These are great because they're so cheap and easy to make in the morning and can easily be adjusted to be spicier or salty, whatever you want!

Supplies

Olive Oil

Paprika

Garlic Salt

Pepper

Russet Potato

Using a knife or vegetable peeler, peel the potato, cut out any large eyes or dark spots of the potato, you can leave any small eyes on the potato to cut down on waste and prep time. Next, cut the potato into eighths but keep them together as if they were fourths, this makes cutting them easier. Lastly, cut the eighths into 1/4 inch think pieces as seen in the image above, place all of the pieces on a microwave-safe plate and make sure that as few of the pieces are still stuck together. Microwave for 2 minutes, if the potatoes aren't fork-tender, microwave for another 30 seconds.

While the potatoes are microwaving, place 1/2 tbsp butter into the pan along with 1 tsp olive oil with the heat set to medium. Once melted, add the potatoes to the pan, if any pieces are sticking together break them apart, pieces that stick together are raw on one side and don't cook through fully. Once the potatoes are added, add pepper to taste, remember that these potatoes need to be flipped 3-4 times so under season. Add a little sprinkle of paprika, this will add color but don't use smoked paprika, this results in very spicy potatoes. If you do want your potatoes to be spicy, add half the amount of smoked paprika. Add garlic salt to taste and flip after 1 minute 30 seconds, after flipping, reseason the potatoes.

This step is important because of the leftover oil from cooking. Place the potatoes on two to three layers of paper towels, once most the grease has been absorbed move the potatoes to a plate or bowl and add salt to taste. Enjoy!
