Delicious Turkish Simit - Bagel, Real Recipe

Today I made a delicious Turkish bagel recipe. This recipe is an original recipe, but it is not normally cooked at home. It is cooked in stone ovens with wood fire. I'll show you how to bake it at home. With these measurements, there will be 12 bagels.

Ingredients:


For the dough:

1 kg of flour

600 grams of warm water

2 teaspoons instand yeast

2 teaspoons of salt

To spread on the bagels:

1 cup grape or mulberry molasses / Pekmez (optional)

1 cup water

250 g sesame

Preparation of Yeast

Add the yeast over the warm water, let it sit until the flour is prepared (3-5 minutes).

Sift:

Add salt to flour and sift. Make a space in the middle part of the flour.

Mix:

Pour the yeast and water mixture into the middle of the flour. Mix gently with a fork or hand.

Dough:

When it becomes dough, put it in a bowl. Cover it with a cloth. Leave it at room temperature for half an hour. After half an hour, the dough will rise. It will not rise much like bread dough. So you don't have to wait long.

​Separate:

Separate 65-75g pieces from the dough. There will be 24 pieces in total.

Shape:

Unroll each piece like long ribbons. Twist the 2 long strips together (as in the photos). Join the ends together in a round shape.

Water and Sesame:

Add water to a bowl. In the original recipe, water and molasses are mixed and used. But you can also do it with just water. Pour sesame seeds in a large plate. Soak the bagels in water first. Take it out immediately and put it in a sesame plate. Cover all sides with sesame seeds. Use normal water at room temperature.

230 Degrees:

Put the bagels on a baking tray. Preheat oven to 230 degrees. My oven is an electric mini oven. It doesn't have any additional settings.

Simit (Bagel) Is Ready:

After 15-20 minutes, your bagels will be ready. Make sure to check it after 10 minutes and cook it like that. You can also eat it like a bread. Usually eaten with tea in Turkiye. It is also very popular to put cheese in it and eat it.
