First, preheat oven to 350 degrees F (175 degrees C). Then, cream together (mix until well combined- until a pale yellow) 1 cup of softened butter, 1 cup of white sugar, and 1 cup of packed brown sugar. If you don't like sweet cookies, instead of 1 cup of white sugar, put in half a cup of white sugar.

In the butter and sugar mixture, beat in 2 eggs one at a time, then stir in the butterscotch flavoring. Dissolve 1 teaspoon of baking soda in 2 teaspoons of hot water. Add to batter along with half (1/2) a teaspoons of salt. Stir in 3 cups of all-purpose flour and 2 cups of semisweet chocolate chips. Drop by large spoonfuls onto baking pans covered in aluminium foil.

Bake the cookies in the oven for about 10 - 15 minutes or until the edges are nicely browned. The result may look like a mess, but it's okay. Take the pan out with a towel or glove (so you don't get hurt). Next, cut the cookies out with a cup (you can choose any size). It will be cut quickly as they are soft cookies.
