Delicious Kumara (Sweet Potato) Bake With a Hint of Citrus
Mmmmm... nothing quite like a fabulous roast turkey dinner! This year for the Canadian Thanksgiving I wanted to do sides that were a little more North American than our southern hemisphere roast spuds and gravy.
I had the pleasure of trying a sweet potato bake last Thanksgiving that was pretty darn sweet. I did a search on ole friend Google and found a plethora of recipes that sounded more like desserts than sides - who puts marshmallows on a side dish! Sweet potato (aka kumara in my part of the world) has always appealed to me, and I think they are sweet enough by themselves, so put together this dish to the delight of my family :)
What You Need
To serve about 8:
Ingredients:
Two good sized sweet potatos
Three eggs
1tsp salt
1/4 cup milk
spray oil/butter
Topping:
1/4 c Flour (I used GF)
1/2 c brown sugar
1/2 c sliced almonds
2 tbsp butter
zest off one or two oranges
Tools:
Peeler
Masher
Grater/zester
Pot
Baking dish
Mash Prep
Peel your sweet potatos and chop them into chunks. I use our apple slicer to make the job a bit easier!
Cook in lightly salted water until soft.
Drain and mash while warm.
You can do this ahead of time and refridgerate the mash until it is needed - a helpful tip when making a huge dinner!
When you are ready to cook the bake, mix the eggs, salt and milk into the mash. I did this when it was cold and used the mixer - easy!
Spray your baking dish and put the mash mix in, evening it out on top.
Topping
Mix together the flour, brown sugar and nuts.
Grate in cold butter and mix.
Grate/Zest your oranges into the mix and stir.
Sprinkle the topping over the mash, covering the entire area.
Bake at 325° for 45-50 mins until the topping is crunchy and the mash is hot though.
Mmmm Delicious!!!
Serve hot from the pan with your turkey dinner!
The eggs in the mash make it lights and fluffy and the light topping gives a crunch with a hint of citrus tang in every mouthful. Delightful!
Variations
If a streusel topping on your potato is not to your liking, you could try a more savoury topping on this - your average stovetop stuffing mix would make an interesting alternative.
at the other end of the scale, if you want a sweeter than sweet dinner side, add sugar to the mash (one recipe I saw called for a cup of sugar in the mix) and top with mini marshmallows!
