This is one of the best grilled cheeses that I have ever had! Made with Brie and Manchego cheeses, it is a delicious lunch alongside a hot bowl of tomato soup.

Supplies

You will need:
-Brie cheese
-Manchego cheese
-Softened butter
-A butter knife
-Sourdough bread or other white bread
-Honey
-Cutting board
-Knife to cut the cheese
-Panini press or a pan

Assemble Your Sandwich

First of all, turn on your panini press. Turn it to a medium-high temperature and set aside. Start to cut up the cheese in slices no more than 1/4 inch thick. Place one slice of sourdough bread on a plate, and place one layer of Brie cheese on top. Add one layer of Manchego on top of the Brie, then add one more layer of Brie. Drizzle honey on top of the cheese, then place another slice of sourdough bread on top. Lightly butter the face of the top bread slice.

Melt Your Sandwich

Place your sandwich buttered side down in the panini press or pan. Lightly butter the un-buttered side, and cook until cheese has fully melted and bread turns golden brown. If the sandwich seems to be cooking on an angle (one side is higher than the other), flip it around so the higher side is facing the opposite direction that it was. Take the sandwich out of the panini press and enjoy!
