Combine Shortening and Sugar.
Cream the shortening and sugar together until light and fluffy.
Dry Ingredients
In the mixing bowl, sift together the flour, salt, baking soda, and baking powder.
Combine Both Mixtures
Combine the sifted dry ingredients to the butter and sugar mixture until evenly combined. The mixture will appear dry and grainy. Use the rubber scraper to remove any excess from the side of the bowl.
Adding the Eggs
Mix the eggs into the batter one at a time until thoroughly combined. By this point, a soft dough should start forming, as seen in the second photo.
Milk & Bananas
Add the milk and mashed bananas to the batter and mix until it is smooth. Remember to use your rubber scraper to remove batter from the side of the bowl.
Walnuts (Optional)
Lastly, blend the walnuts into the batter. This step is not necessary, but adds nice taste and texture to the bread.
Pour the Batter and Bake
Evenly distribute the batter into two loaf pans. If you only have one loaf pan, pour half and save the rest to bake later! Place the pans in the preheated oven and bake for 40-50 minutes. When the tops become brown, you can check to see if they are finished baking by sticking a thin knife or a toothpick into the middle of the loaves. If it comes out clean, the bread is done!
Enjoying Your Bread
After the bread has finished baking, remove the loaves from the oven and allow them to cool before taking them out of the pans. You should now have two golden-brown loaves of banana bread. The top should be slightly brown in color and a little crunchy around the edges. You can slice the loaves and add any of your favorite spread. It can be enjoyed anytime of the day!
