Delectable Zingy Ginger Lemon Scone Bread

Hello! This is my first Instructable so I am trying to figure it out! ;-) as I am a visual learner this website seemed very fitting and I was so excited to discover a bread contest. Life is not all about winning but just savoring the moments and delights in such simple pleasures! I really enjoy baking but some of us do not have time for it, as it seems like another task needed to get done, which is why I created this delicious and speedy ginger scone bread recipe! ( also yes, scones ARE considered a bread, I will confess that I had to search it up but as it says that scones are considered a quick bread, a bit like American biscuits because they are leavened with a chemical levener!) this is a very pleasing recipe that is quick to whip up but yet delicious. And the ingredients for it are day-to-day used ones! It does not taste like a sort of scone that is very full and feels bad for you, somehow it feels rejuvenating as it has zest and of course ginger in it! These are amazing to have with tea or coffee or even just on there own as a dessert! I am sure you will not be able to get enough of them. I made mine the classic scone way but you can also make them all sorts of shapes with cookie cutters, rolling them like a cinnamon roll, etc. you can make them smaller by dividing the dough into four balls rather than two. And with an optional garnish of a quick and easy lemon glaze! Make them crunchy or soft by the thinness to the thickness you have them as. I do hope you try to make them and enjoy them as much as I did!

Supplies

For the scones

  • 3 cups all purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/3 cup of ginger water or tea
  • 2 tablespoons lemon zest ( probably 2 lemons!!! )
  • Candied ginger ( store bought or from scratch!!!)
  • 10 tablespoons melted butter
  • Caster sugar or any coarse sugar
  • 2 1/2 tablespoons grated ginger or ginger paste ( I prefer freshness but they both taste delicious!!!)
  • 1/2 cup buttermilk or a bit less + 4oz yogurt ( I used lemon! ) or 3/4 cup buttermilk or 3/4 cup of yogurt, to make buttermilk ( which I did ) take 3/4 of a cup with one tablespoon less of milk plus one tablespoon of lemon juice!!
    For the candied ginger
  • Cut up in thin slices 160 grams of ginger, weigh after peeled. Boil in hot water. Discard the water and do twice more. With the last set of water keep it for tea or this recipe. Make simple syrup ( 1 cup of sugar and 1 cup of water ) in a saucepan. Put ginger in there and leave it on low for about 20-25 minutes, do not overcook otherwise it will be hard, not soft to bite into. It will be a bright yellow sort of color. Drain and keep remains ( to eat!!! ) after slightly cooled, roll on caster sugar, ( it has different names too!!!) cut up. ( I did not do Instructable pictures for this as it is optional to make it, you can just buy it!
    For the (optional)lemon glaze
  • 1 cup powdered sugar
  • 1 lemons juice
  • 2 tablespoons milk or half and half

Preheat Oven and Prepare Sheet

This is simple, ( I hope you know how to do this! ) but preheat your oven to 400 degrees Fahrenheit or 200 degrees Celsius and line a baking sheet with parchment paper.

DONE!!!

Combine Dry Ingredients

In a bowl you will be using for the whole recipe ( so a decent size, better to be big than medium!!! ) whisk together your dry ingredients. Flour, sugar, baking soda, baking powder, and salt.

Wet Ingredients

Once the dry ingredients are combined, use a fork and stir in your buttermilk and/ or yogurt, ginger water or tea, and melted butter. Do not be afraid to get your hands dirty!!! Or, use something that is non- stick like wood. The mixture will be sticky/shaggy looking, do not worry this will start to change!!!

The Rest of the Mixing

You are almost done!!! Add your cut-up candied ginger and lemon zest, plus a squeeze of lemon, but not too much otherwise there will be a reaction!!! Combine well. If the dough is too dry add water or cold tea, if it is too sticky add flour, but wait for the next step to find out!!!

Forming Your Dough

This is it!!!The last hard part ( not that it was hard ) flour a surface and rolling pin. Divide your dough into two separate balls, if you want them smaller then do four. It took me a couple tries ( as it is sticky) but do not give up, it is super satisfying when you get a nice roll out of it!!! If you have a design ( cookie cutter ) then do it now!!! Otherwise roll out a dough ball so it is a nice inch thick. If you want it crispy then do it thinner. Cut the dough in half, then again going the other way, cut so they look like wedges or triangles. Spread them out on your baking tray!!!

Cooking Them!!!

Sprinkle coarse sugar on the scones, then put your equally distributed scones in the oven for about 19 minutes or until a nice blanket of gold has smothered them, take out and let them cool!!!

( Optional ) Lemon Glaze

This is a clear, lemon glaze that is super easy to make, but yet optional! Stir 1 cup powdered sugar, 2 tablespoons milk or half and half, and 1 lemons juice together with a whisk, transfer to something easy to pour with, and pour over your scones on a cooling rack!!!

These are the perfect things to make when you have friends over or anyone, or just enjoy them yourself, they can last up to 3-4 days ( but I doubt they will!!!) great to have with tea, coffee, or by themselves they are so good!!!
