Deep Fried Breakfast Tortilla

1 large egg and two soft corn tortillas.

Mix egg, apply to outer ring of one tortilla shell.

Press other tortilla onto tortilla that had egg wash applied to it. Press down firmly.

Preheat oven to 325 degrees Fahrenheit. Place tortillas on aluminum foil on center rack. Bake for 12 minutes.

With small knife, partially separate two baked tortillas shells. This will be necessary because the egg wash acts as a glue when the shells are baked in the oven. You want to form a pocket for your stuffing ingredients.

Cover bottom of skillet in vegetable oil. Heat over medium heat on stovetop for about 3 minutes.

Pre-cook the meat you will use for stuffing in microwave for 1 minute on high setting. (In my recipe I used thinly sliced deli ham.)

Cook remaining beaten egg in microwave for 1 minute on high setting. Scramble cooked eggs with a fork.( I forgot to use a photo of the cooked scrambled eggs).

Fill tortilla pocket with cheese of your choice. ( in my recipe I used smoked provolone).

Stuff the tortilla pocket with pre-cooked meat.

Once tortilla is stuffed with ingredients of your choice, fry in pre- heated oil. Cook until golden brown on both sides.

Remove cooked , stuffed tortilla pocket from oil and place on a plate lined with paper towels. Gently press towel over entire tortilla to remove excess cooking oil.
