Danishes - Without Egg -

This is my very own variation of a danish recipe. It is egg-free! You get 12-14 Danishes.

What You Need

Here is what you need for your egg-free danishes:

1/3 cup (60 ml) of milk
1 pack of yeast
4 Tbsp vegetable shortening
3 cups (350 gr) flour,
1 tbs baking powder
1/4 to 1/2 cup (50 - 100gr) sugar.
1 cup jam
1 cup mascarpone

First you have to make the dough. You can use a ready made dough (that might contain egg) but as always I prefer to make my own dough. Here is the recipe without eggs.

Heat ¼ cup (60 ml) of milk to 100 degree fahrenheit (37°C) and mix one pack of yeast into the milk and set asaide.

Mix 3 cups (350 gr) flour, one tbs baking powder and 1/4 to 1/2 cup (50 - 100gr) sugar. The amount of sugar depends on your jam. If your jam is sweet you don'd need that much sugar.

Combine yeast, 1/2 cup of milk 3 Tbsp shortening (butter) and add it to the flour. Mix the ingredients with your kitchen maschine or with your hands.

Use a rolling pin to make an even layer.

Use a glass or mug to cut out circles.

Put the circles on a baking sheet on a baking tray.

Mascarpone

Your fist layer on the top is mascarpone. Use a spoon to spread some mascarpone onto the circles.

Variation:

Bake the danishes without any topping for 6 min. Let them cool down a bit, cut them like a breadroll and spread the mascarpone and jam between the two layers. Now put them back into the oven until they are golden.

Variation 2:

Bake the danishes without any topping for 6 min. Let them cool down a
bit, cut them like a breadroll and spread the mascarpoone and jam between the two layers. Now spread some more topping on top of the filled danishes and bake them until they are golden.

Variation 3:

Mix the mascarpone and the jam together and use it as the toppin or filling.

The next layer is jam. You can use any jam you like. I used blackberry jam but it tastes just as wounderful with rasberry jam or any other jam.

Put the jam into a pan and heat it up. Make sure it doesn´t burn :) Now spread the warm jam onto the mascarpone.

Bakers Gonna Bake, Bake, Bake...

Now bake the danishes for 10-12 min at 400 °F (200°C) or until they are golden.
