Dahi Bhindi

Dahi bhindi is a delicious dish made from two main ingredient bhindi/ okra and curd/ dahi. This creamy spiced and tangy in taste goes well will steamed rice or jeera rice or hot phulka and paratha.
In this dish we saute bhindi/ okra in oil till they are almost 90 percentage cooked this helps us to get rid of sliminess of okra
Earlier I was not found of bhindi due to it sliminess but them when my hubby made this version and I started loving this vegetable.
In this vegetable you can add tomato and kaju paste but I prefer making it simple just with curd and other few easily found spices. Here I have used home made curd as I alwys prefer curd made in my house but you can buy store brought make sure that your curd is slight tangy when you are making this vegetable.
Other important point pls check okra while trimming its head and tail for any worms.
Okra/ bhindi/ lady finger are low in calories and rich in vitamins and calcium.

Supplies

Ingredients
500gm bhindi/ okra/ ladyfinger
4tbsp curd ( slightly tangy one)
2 small onion finely chopped
2tbsp oil
1/4 tsp hing
1tsp cumin seeds
1tbsp finely chopped ginger garlic
3 green chilli finely chopped or as per your taste
1/4 tsp tumeric
1 tsp coriander powder
1 tsp cumin powder
1tsp red chilli powder
1tsp garam masala powder
Salt as per your taste
Finely chopped Coriander leaves for garnish

Cleaning and Cutting Bhindi/okra

Rinse 500 grams of bhindi (okra) in water .Then pat dry the bhindi with a kitchen towel or spread them on a plate and let them dry on their own.
Trim off the head and tail of the okra. Cut the okra into 1 inch pieces, give a slit in middle ( you can skip this if you want) cut all the okras in the same way

Removing Sliminess From Bhindi /okra

Heat 2 tablespoons of oil in a pan. Add the chopped bhindi and saute for at least 7 to 9 minutes on low heat till they change color and are soft and tender onces done remove them into another bowl. This we do to remove sliminess from bhindi/okra

Start Preparing Gravy

In a same pan heat 1tbsp of oil add cumin seeds onces it start to splutter add hing/ asfotedia then add finely chopped onions, ginger garlic, and green chillies saute them together till the onions change color or become translucent.

Adding Spices

Onces onion changed its colour add other spices start with tumeric, coriander powder, red chill powder, cumin powder and garam masala saute everything together for one min.

Adding Curd

Onces all masala are cooked nicely lower the heat,add whisked curd mix well stir continuously for 1 to 2 min then close it with lid and let it simmer in low heat for 6 to 7 min. Onces masala are cooked oil will start floating on the top.

Adding Okra/ Bhindi

Onces masalas are cooked rinse curd bowl and add one cup water bring This to boil.This gravy thickens as it cool down so adjust water consistently accordingly now add salt as per your taste add fried bhindi/ okra mix well cover and let it simmer in low to medium heat for 4 to 5 min.

Serving Dahi Bhindi

Open your lid mix well add chopped coriander leaves and serve hot with steamed rice or jeera rice and with hot phulkas, parathas and naans.
