DOG- FRIENDLY VEGAN PASTA RECIPE.

Supplies

For pasta dough:

  1. 1 cup of semolina flour (or you can use whole wheat flour).
  2. Water (as needed).

For pasta gravy:

  1. 1 tablespoon of olive oil or you can use coconut oil.
  2. Water (as needed).
  3. 1 cup of Spinach
  4. 1/2 cup of peas.
  5. 1/4 cup of carrots.
  6. 1/4 cup of capsicum.
  7. 1/4 cup of green beans.
  8. 1/2 cup of cauliflower.

MAKE THE DOUGH:

  1. On a clean surface or in a large mixing bowl, combine the semolina flour and a little bit of water.
  2. Gradually combine flour and a cup of water, mixing with your hands or a fork until the dough begins to form.
  3. Once the dough starts to come together, begin kneading it. Add a little bit of water at a time if the dough is too dry.
  4. Knead for about 10 minutes until the dough is smooth, elastic, and not too sticky. If it feels too dry, you can add a little more water.
  5. Cover the dough with a damp cloth or plastic wrap and let it rest for 30 minutes. This helps relax the gluten and makes rolling out the dough easier.
  6. Meanwhile, let’s make spinach and peas puri.




PREPARE SPINACH AND PEAS PURI.

  1. Clean the spinach and peas.
  2. Bring a pot of water to a boil, add spinach and peas.
  3. Blanch the spinach and peas for about 5 minutes, then transfer them to a bowl.
  4. In a blender or food processor, combine the spinach and peas. Add a small amount of vegetable stock or water if needed to help blend.
  5. Blend until smooth.


CUTTING VEGETABLES.

  1. Vegetables: 1/4 cup of Carrot, 1/4 cup of green beans, 1/4 cup of capsicum, 1/2 cauliflower.
  2. Peel and trim the vegetables nicely.
  3. Cut into thin, even strips about 2-3 inches long.



ROLL, CUT, AND COOK THE PASTA.

  1. Divide dough into 4 pieces.
  2. Flatten each piece into an oval.
  3. Use a pasta maker or rolling pin or thin the dough. Roll to desired thickness, gradually reducing settings.
  4. Cut pasta into desired shape.
  5. I make two different shapes of pasta (spaghetti and ribbon-shaped pasta, I added a video you can learn from there).
  6. Cook in boiling water for about 5 minutes.

Pro tip: Dust pasta with flour to prevent sticking and ensure even cooking.

  1. Meanwhile, let’s make pasta sauce.


MAKING PASTA SAUCE.

  1. Take a pan and add 1 tablespoon of olive oil or coconut oil over medium heat.
  2. Add green beans and carrots, sauté for 2-3 minutes until veggies are 60% cooked then add cauliflower and capsicum, cooked for 3-4 minutes unit veggies are almost tender.
  3. Now pour spinach and peas puri over veggies and cock until the sauce has thickened and smooth. Add water if needed.


FINISH THE DISH.

  1. Add sauce to cooked pasta. Toss to coat, using additional pasta water if needed.
  2. Let it cool down for a while

NOTE: Remember to serve in small quantities as a special treat, not as a regular meal replacement.
