DIY It's-Its

Make your own customized version of this classic frozen treat. We used oatmeal cookies and mint chocolate chip ice cream, but any combo can be delicious.

Ingredients

You will need:
-1 dozen of your favorite cookie, relatively equally sized
-1 quart of your favorite ice cream (ideally complimentary to your cookie flavor)
-12oz chocolate chips or other melting chocolate
-2Tbsp butter
-a baking sheet that fits in your freezer

Makes six sandwiches

Note: I like the oatmeal cookie recipe that comes on the back of the carton of Quaker oats.

Remove ice cream from freezer to soften for a few minutes. Choose pairs of cookies that match sizes as well as possible. Spread softened ice cream on one cookie of each pair and squish together to make sandwiches, flat sides together. Place completed sandwiches on a baking sheet in your freezer and let chill for 1 hour.

Chocolate!

Everybody likes chocolate. Well at least everybody should. So pretty much any dessert will be made better by being covered in chocolate.

Melt chocolate chips and butter in a pan on the stove, being careful to stir often to avoid burning he chocolate. If it gets too clumpy or grainy try adding a bit more butter.

Dip your frozen sandwiches in chocolate as quickly as possible to prevent melting the ice cream. You can try using a spoon for this but we had more success dipping by hand. Try to cover both sides and the ice cream edge with chocolate, using your fingers to smear across exposed areas as necessary.

Place chocolate-covered sandwiches on a baking sheet covered with wax paper and replace in freezer.

If you are superhuman you might be able to eat an entire sandwich by yourself, but if not you'll need to find some friends with whom to share. And fast if you're going to need to get back all that freezer space you've been taking up with your it's-its.
