Currant and Cherry Ice Cream
Here is a recipe of Currant and Cherry ice cream without an ice cream maker!
Easy and delicious!
Supply and Ingredients
Supply
- Two large bowls
- Two small bowls
- A balance
- A saucepan
- A whisk and an electric one
- A maryse
- A knife
- A strainer
- A stamen
- A plastic box with a lid
Ingredients
- 500g of Currant + some more for decoration
- A handfull of cherry
- 25cL of whipping cream
- 125g of icing sugar + a pinch
Get It Clean
1. Clean with water your cherry
2. Clean very carefully your currant. Put them in your strainer and put some water on it. With extrem care, rinse them. If you don't do it with care, all your currant will explode and you will lose their precious juice.
Get Your Currant Juice
1. Put your 500g of currant in a saucepan. Lit the heat under it and let them cook. Be sure to stand by it and stir it well, it's very fast, in 5 minutes it's done. (You can boil them but carefull to not burn them).
2. Put the juice in the stamen to get rid of the seeds and skin. And put it back in your saucepan.
3. Add 125g of icing sugar and stir well with your whisk until it is disolved.
4. Put the juice in a bowl and let it cool down. You can put it on your window.
5. When it's cool enough, put it in your refregirator to make it chill.
6. While it's chilling, you can cut your cherry in quarters. Be sure to wear an apron because it can get messy!
Whisk It
1. Whisk your cream and add around 50g of icing sugar.
2. When your cream is well whipped and your juice cold, add the juice to the cream. Do it carefully to not break your cream. Do some round movements from the bottom to the surface clockwise.
Garnish Your Box
1. Put a layer of cherry, then your currant cream, then some currant berry you have left.
2. Repeat to fill your box.
3. Cover with a lid and put it in the freezer.
Ps: You can as you want put the cherry and the remaining currants wherever in your box. You can in layer like me, but you can mix them with the cream, or put them only at the bottom or at the top. Just do what you feel !
