Cucumber Hemp Nori Cracker and Dill Tonic

This is a cool vegetarian breakfast or snack recipe for hot summer days. The star ingredient is cucumber. It includes cucumber hemp seed nori crackers and cucumber dill tonic juice. It is made of all vegetables, fruit, and plant ingredients but packed with good fat and plant protein. It can sustain you all morning with good energy.

Food Processor

Fruit and Vegetable Juicer

Coffee Grinder


INGREDIENTS FOR DEHYDRATED CUCUMBER:

4 cucumbers, peeled and seeded(reserve seeds and ribbing for the tonic in step 3)

1/4 cup grapeseed oil,

1 tbsp apple cider vinegar

1/2 tsp sea salt

INGREDEINTS FOR CUCUMBER HEMP SEED NORI CRACKER:

1 cup dehydrated cucumber

1 cup walnut, soaked and dried with paper towel

2 tbsp flaxseed

1/4 cup hemp seed

INGREDIENTD FOR CUCUMBER DILL TONIC:

1.5 cucumber, peeled, plus reserved seeds and ribbing from cucumber dehydration above

1 green apple, sliced

A few leaves of rainbow chard

A few leaves of lacinato kale

A few leaves of lettuce

1/4 bunch of dill

4 sticks of celery

1 drop of dill essential oil in each glass before serving(optional)

Start by removing the ends of each cucumber, especially, the stem end sometimes can be bitter.

Peel them.

Quarter them.

Remove seeds and ribbing.

Compost the peel.

Reserve the seeds and ribbing in a container, covered and placed in fridge for use in making tonic in step 3.

Slice each quarter and collect slices in a large mixing bowl.

Add oil, salt, and vinegar to it and mix well.

Evenly place slices on dehydrator trays.

On the bottom tray, use parchment paper on the tray and place the wetter slices together with juice on it.

Dehydrate for 3-5 hours.

Soak walnut for a few ours and dry the nuts with paper towel.

Add walnut, dehydrated cucumber, hemp seed, and flaxseed(Note: It's better to grind flaxseed to powder in a coffee grinder before adding it to food processor. Flaxseed flour acts as "egg" to bind ingredients together to batter form. My food processor almost did nothing to flaxseed. So my batter is very crumbly and it took a long time to spread it on the nori sheet.) to food processor and grind it to a paste. Stop a few times to scrape down the wall of the processor.

Place the batter on two sheets of seaweed.

Spread the batter to even thickness.

Cut the sheets to cracker size pieces. (Note: In picture, I was using a rotary pizza cutter to cut it and found it did not work well. Later I had to use scissors to cut the big sheets to crackers.)

Place cut pieces on food dehydrator trays and dehydrate for 3-5 hours.

Cucumber Dill Tonic Juice

Wash, remove ends, and peel cucumber.

Wash and remove water from vegetables.

Juice crunchy vegetables and apple first and fibrous celery last.

Mix the juice and fill serving glasses.

Add 1 drop of dill essential oil, if you have, in each glass and garnish with dill plant.
