Crustless Quiche for One

As a student preparing to leave home for university I have started to put together a number of single serve recipes. This recipe makes a quiche for one. The fact that it doesn't use pastry makes it the perfect recipe for using leftovers. Swap or interchange the vegetables for whatever is in the fridge or meat from last-night's dinner.

Collect Ingredients

1 egg

20g flour

90ml milk

1/4 small onion

1/4 medium potato

1/4 cup grated tasty cheese

50g frozen spinach

Peel and grate the potato.

Combine flour, egg and milk.

Mix the grated potato into the quiche mixture.

Peel and finely chop the onion.

Mix the chopped onion into the quiche mixture.

Place the spinach into a 15cm diameter quiche dish and break into small pieces using a fork.

Mix half of the grated cheese into the quiche mixture.

Pour the quiche mixture into the quiche dish and mix to combine the spinach.

Sprinkle the remaining cheese over the top of the quiche mixture.

Place in the oven for 15 minutes at 200 degrees celsius (400F) and then 160 degrees celsius (320F) for another 15 minutes. Or until set in the middle.

Remove from oven and serve.
