Crustless Cheese Pizza
I love pizza. I also love tinkering with recipes and making fun twists on classics.
Today I'll show you how I make mini pizza crisps using baked parmesan chease! I also made a video showing you how I did it above :)
Gather Up Your Ingredients
The only required ingredient for this dish is:
- Parmesan cheese, finely grated. Other cheeses will not work for this application!
For toppings, you can use whatever you have on hand! I'm using:
- Pepperoni
- Bacon, cooked and cut into pieces
- Red onions (possibly my favorite non-meat pizza topping)
- Red pepper flakes
- Italian Seasoning
Preheat your oven to 300 degrees and get ready for assembly!
Prep the Pan and Make the Base
Grab a half sheet pan or cookie sheet and either a silicon baking mat or aluminum foil. If you are using foil, lube it up with a little no-stick spray.
Measure out 1/4 cup of parmesan cheese and pour it carefully onto the pan. Use the back of the measuring cup or a spoon to even out the cheese into a disc.
Top the disk with some Italian seasoning and park the pan in your oven for 5 to 6 minutes, or until golden.
Put Cheese Disk on Mould
This step is optional put a nice touch. After the cheese comes out of the oven it is still a little soft, but it will harden up after a few minutes. This means we can place it on something to change its shape!
I'm using a small saucer to make the cheese slightly cupped.
Now we will add the toppings!
Add Toppings and Finish
Add whatever toppings you want after the cheese cools. Cut and serve! The parmesan forms a semi-rigid base (oddly crust-like) that holds all the ingredients nicely.
