Crumble Cinnamon Apple Muffins
 
      Do you have apples that are starting to soften? This apple muffin recipe makes the perfect breakfast on-the-go snack or tasty treat before bed.
Supplies
 
       
      Tools:
- Two medium sized bowls
- Hand or bowl Mixer
- Spatula
- A muffin pan
- Muffin liners
- Measuring cups- 1 cup, 1/2 cup, 1/3 cup, 1/4 cup, and a teaspoon.
Dry Ingredients:
- 1 3/4 cup diced apples
- 1 3/4 flour
- 3/4 cup granulated sugar
- 1/2 brown sugar
- 1/2 softened butter
- 2 teaspoons baking powder
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
Wet Ingredients:
- 2/3 cup sour cream
- 1/4 cup milk
- 1/4 cup sourdough discard
- 2 eggs
Crumble topping:
- 2 tablespoons butter
- 1 teaspoon cinnamon
- 1/3 cup flour
- 1/3 cup sugar
- Caramel topping (optional)
Combine Butter and Sugar
 
       
      In one of your medium sized bowls, add the butter and both types of sugar. Beat the mixture with a hand or bowl mixer until it creates a crumbly texture.
Mix in Wet Ingredients
 
       
      Mix in the milk, sour cream, sourdough discard, vanilla extract, and eggs. Use your mixer until all ingredients are combined into a smooth liquid consistency.
Fold in Dry Ingredients
 
       
      Using your spatula, fold in the flour, apples, baking powder, salt and cinnamon. Be sure to not over mix, it’s okay if the batter is lumpy.
Create Streusel
 
      Combine softened butter, flour, sugar, and cinnamon to create the streusel.
Pour Batter and Bake
 
      Scoop ¹⁄₃ cup of the muffin batter into each muffin liner and add about 1 tablespoon or streusel to the top. This will create a perfect dozen. Bake at 400* for 17-18 minutes. Once completed add your caramel topping and enjoy.
