Crockpot Fondue
Fondue has always been a social delicacy that often requires a specialty pot. With this recipe you can take this traditional concept and serve it easily in a crockpot for a casual gathering.
Ingredients
For this recipe you will need:
- 2 pounds cheese (Emmentaler, Gruyere, and Swiss), shredded
- 1/4 cups cornstarch
- 1 garlic clove, halved
- 2 cup dry white wine
- pepper and/or nutmeg to taste
Prepare Ingredients
Prepare all dipping foods before starting the fondue. Be creative! Ideas may include steamed vegetables, fruit (non-acidic) and a variety of crusty bread.
To begin the fondue, rub halved garlic onto the base of a double broiler or ceramic pot. Add wine and bring to a simmer on medium-low heat. While the wine is coming to temperature, plug in your crockpot and turn it on the lowest setting.
Place shredded cheese in a bowl. Any mixture of Gruyere, Emmentaler or Swiss will work. For this example I used equal parts of all three. Mix cornstarch with shredded cheese until evenly distributed.
Just Keep Stirring
When the wine begins to simmer, slowly add a handful of cheese to the heated wine. Continue stirring the cheese/wine mixture and add the remaining cheese one handful at a time. Stir constantly. As the cheese melts, it will become smooth. Do not let the mixture boil! As soon as it is smooth, remove from the heat and pour into warmed crockpot.
Serve immediately or place lid on crockpot to keep warm. Stir fondue every 5-10 minutes until serving. This recipe is perfect for a smaller, 2 quart crockpot. If you are using a full sized crockpot, double or triple the recipe. Dip directly out of crockpot and enjoy!
