Crock-pot Beer Cheese Soup
When it's cold outside and you do not feel like cooking, beer cheese soup is a perfect way to trick your wife into letting you have beer with her fancy Olive Garden soup.
What you will need:
1 can (14.5 ounces) chicken broth
1 cup beer
1/4 cup finely chopped onion
2 cloves garlic, minced
3/4 teaspoon dried thyme
6 ounces American cheese, shredded or diced
4 to 6 ounces sharp Cheddar cheese, shredded
1 cup milk
1/2 teaspoon paprika
Combine Ingredients
Combine broth, beer, onion, garlic and thyme into the crock-pot. Cover and cook on low for four hours. Remember to set a timer!
TIP: Choose a light-tasting beer when making this soup. Hearty ales have a stronger flavor that might not please your family's taste buds. Leave the hearty ales for when you have an all adult beer cheese soup party!
Add Cheese
After four hours of errands, chores, or just watching tv, turn the crock-pot cooker onto high. Add in cheeses, milk, and paprika.
Stir and Put on High
Now that all of your ingredients are in the soup, cover and cook on high for 45 minutes to 1 hour on or until the soup is hot and the cheese is nice and melted.
TIP: Stir the soup well the blend the cheeses. Experiment with different types of cheese to add a different taste. Just remember, just like wine, different types of cheese pair well with different types of beer.
