Crock Pot Cinnamon Coffee Cake

This moist, spiced coffee cake complete with a buttery crumble and sweet glaze is baked in a crockpot! This recipe if perfect on hot summer days when you don’t want to heat the oven but still want a cake! Your house will be filled with the sweet and buttery aroma of this classic cake that brings me back to my childhood. Enjoy!

Gather Cake Ingredients

To Make the cake , you will need

- 1 box yellow cake mix
- 4 large eggs
- 1 stick unsalted butter
- 1 cup plain Greek yogurt or sour cream

Make Cake Batter

Melt butter and let it cool for 5 minutes. In a medium bowl, mix together the cake mix, eggs, melted butter, and Greek yogurt or sour cream. At this point you can optionally add half a teaspoon of cinnamon. Just mix until combined, being careful not to over mix the batter.

Prepare Slow Cooker

Line the ceramic insert of your slow cooker with parchment paper and make sure hangs over the sides. This will prevent the cake from sticking and help with easy removal of the cake. Spray the parchment liberally with nonstick oil spray.

Make the Cake

Pour the cake batter into the parchment lined insert. Spread into an even layer. Top crockpot with paper towels to soak up moisture , and then top with lid. Set slow cooker to cook on HIGH for 1 HOUR.

Gather Crumble Ingredients

You will need the following ingredients to prepare the cinnamon crumb topping.

-1 cup flour
-1/2 cup light brown sugar
-1/4 cup unsalted butter, softened
-1/2 T ground cinnamon
-1/4 teaspoon salt

Make the Crumble

In a medium bowl combine all Crumble ingredients. Use your hands or a pastry cutter to carefully combine the butter with the other ingredients. Stop mixing when it looks like chunky sand.

Rotate and Add Crumble

After the Cake has been cooking for an hour, remove the lid and paper towels. Carefully remove the ceramic insert that the cake is cooking in and turn it 180°. This ensures even browning on the sides of the cake. After the turn, pour the crumble over the cake, replace paper towels and lid, and cook on HIGH for 40 MINUTES.

Gather Glaze Ingreidents

Gather the following ingredients to make the glaze.

- 2/3 cup powdered sugar
- 1 T milk
-1/4 t vanilla extract

Make the Glaze

In a small bowl, whisk all Glaze ingredients until smooth and no chunks of sugar remain.

Remove Cake and Add Glaze

After the Cake is done cooking, check it by poking a toothpick in the middle of the cake. It should come out dry with a few crumbs. Lift the ceramic insert carefully out of the pot and let it cool for ten minutes. Then carefully remove the parchment paper from the bottom of the cake and let it cool for 10 more minutes. Top with glaze and enjoy.
