Food That Makes You Go Wow - Crispy Vegetable Manchurian

Today I'm going to share with you one of my favorite vegetarian recipes. It is super easy to make with a few ingredients and it is full of veggies. This is an Indo-Chinese recipe that is very famous here in India and can be found at almost each and every restaurant, also it is a famous street food that we can get for barely less than 50 INR (62 cents). Today you're going to get the most famous Indian street food recipe here. So, without wasting any time let's get into the ingredients required to make this.

Supplies
- Cabbage
- Carrot
- French Beans
- Capsicum
- Yellow Bellpepper
- Red Bellpepper
- Spring onions
- Onion
- Ginger
- Garlic
- Green Chilies
- Ginger garlic paste
- Salt
- Oil
- Black pepper powder
- Dark soy sauce
- Red chili sauce
- Green chili Sauce
- White vinegar
- All-purpose flour
- Corn flour
- Rice flour
Chopp
Finely chop the following vegetables:-
- Cabbage (250-300 grams)
- Carrot (1 medium sized)
- French beans (100 grams)
- Capsicum (1 Medium sized)
- Spring onions (50 grams)
I have used a vegetable chopper. Make sure to finely chop it. You can use a grater too.
Make Mixture
Mix the following ingredients with the finely chopped veggies:-
- Salt (1 teaspoon/ as per taste)
- Black pepper powder (1/2 teaspoon)
- Ginger garlic paste (1 teaspoon)
- Green chili sauce (1 teaspoon)
- All-purpose flour (2 tablespoons)
- Corn flour (2 tablespoons)
- Rice flour (2 tablespoons)
Mix everything well. Make a dough kind of consistency. To know that try to make balls of the mixture, if it is firm then it is ready. Or else you can add another 1-2 tablespoons of all-purpose flour if needed.
Don't add water at all. We have added salt to the mixture the veggies will leave the water.
Make Balls
With the help of your hands, make small balls out of it.
Now it is ready to go into the oil.
Deep Fry
- Heat oil in a deep pan.
- Once the oil is completely hot, Add in the veggie balls one by one.
- Don't overcrowd the pan.
- Fry the balls till they turn crispy and golden brown.
- Once done, strain them and place them on a kitchen towel/ tissue paper to soak the excess oil.
Chop
Finely chop
- Green/red chilies (2-3)
- Garlic (12-15 cloves)
- Ginger (2 inch)
Cut
Randomly cut
- Capsicum (1 small)
- Red bell pepper (1 small)
- Yellow bell pepper (1 small)
- Onions (1 small)
You can use any other veggies you like.
Saute
- Heat 2 tablespoons of oil in a pan. (I have used vegetable oil. You can use any.)
- Once it is hot, add in the chopped chilies, garlic and ginger.
- Saute them for a min or two.
- Cook it till the raw smell goes away.
Cook Veggies
- Once done, add in the veggies.
- Mix them together.
- Cover and cook for 1-2 minutes on low flame.
Sauce It Up
Add the following ingredients:-
- Salt
- Black pepper powder
- Dark soy sauce
- Red chili sauce
- Green chili Sauce
- White vinegar
Mix everything well. Cook the sauces for a minute.
Slurry Time
- Make a slurry with 1 tablespoon of corn flour and 1/2 cup of water.
- Mix it well.
- Add the slurry to the veggies while stirring continuously.
- Add a pinch of orange food color (Optional).
- Add 1/2 cup of water.
- Mix it well.
Gravy is ready.
Add the Fried Balls
Add the crispy veggie balls to the gravy.
Mix everything well.
Garnish it with some chopped spring onions. (Greens)
Ready
Our crispy veggie balls with gravy is absolutely ready! Serve it hot and enjoy.
