Crispy Potato Chips in the Microwave


The microwave is an interesting kitchen gadget that has been around for many many years. But it can be used for so much more than just reheating food, or cooking those frozen dinners, haha. Did you know you can make crispy crunchy potato chips in the microwave? Is it my favorite way to make potato chips, no, but it is great if you just want to make a small handful of chips and don't want to heat up all that oil. It is a little healthier too. Let's get started!

Supplies

Ingredients:
- Potatoes
- Olive Oil
- Salt
- Other seasonings like garlic powder, paprika, ranch powder, white cheddar cheese powder, etc.
Equipment/Tools:
- Microwave safe plate
- Mandolin
- Bowl
- Parchment paper (optional)
- Tongs
- Oven mitt

Prep the Potatoes



Begin by rinsing and drying the potatoes. Especially if you are not going to peel them, it is not fun leaving bits of dirt on the skin, haha. You can peel the potatoes if you wish, but I generally do not.
Now slice those potatoes really thin by using a mandolin or a knife. I always use my mandolin because it gets pretty much the same thickness every time and it is so quick. You can use a knife too it is just not as efficient. And if you have an electric slicer or hand crank slicer use that. The potato slices should be between 1/16th of an inch and 18th of an inch thick.
Arrange the Potato Slices




There are a couple of ways to cook the potato slices and make crispy chips. Both ways involve using a microwave safe plate. The first way is to just spray the plate with olive oil or baste some oil on it. This will help keep the chips from sticking once cooked. Lay the slices down in a single layer and then spray the tops of the slices with some oil or baste some oil on them. You can also sprinkle the tops with a bit so salt.
OR
You can lay a piece of parchment paper down on the place then put the slices of potato on top of that. This is my PREFERRED method. Because the chips do not stick at all. I would still do a light spray of olive oil, it just helps with the crispness and adds a touch of flavor.
Microwave Those Slices to Make Crispy Chips





Now place the plate in the microwave and cook on high for 2 to 4 minutes. The amount of time will vary depending on the size of the slices, the wattage of your microwave, and how thick the slices are. After 2 to 3 minutes I usually will flip the slices over to the other side and then go another minute for the final crisping stage.
They should be lightly browned, usually, this will occur in the center of the chip. They will feel very crispy and crunchy when done. Now just lightly season with more salt, garlic powder, cheese powder, paprika, etc. Enjoy!
Store any leftovers in a brown paper sack for a few days. Mine never last that long.
