Crispy Onion Bajji - Who's Hungry

The bajji is a traditional tea time snack all over India. This is a recipe which everyone loves irrespective of age. This recipe originated from South India. There are a lot of variants for this awesome recipe.

The bajji typically consists of a vegetable which is covered in a batter and then deep fried in oil. For all the bajji lovers out there, this Instructable will definitely be useful.

Here, I'll show you the recipe to make Crispy Onion Bajji's with the most simple ingredients found in your kitchen.

To make this simple recipe, make sure to find the following ingredients in your kitchen.

  • Onion
  • Salt
  • Chili Powder
  • Gram Flour
  • Oil (For Deep Frying)
  • Baking Soda
  • Turmeric Powder (Optional)
  • Pepper Powder (Optional)
  • Chili Flakes (Optional)

Prepare the Batter

The unique part of any bajji is the batter used for coating. If you get the coating right, you'll end up with the best baiji's you've ever tasted.

There are many ways to prepare the batter, but this is my way to prepare it.

  1. First, take 1 cup of gram flour in a mixing bowl.
  2. Add 1 Tablespoons of salt and 1 Tablespoons of red chili powder to it.
  3. Also, add a pinch of baking soda to it.
  4. Now add water to it and mix it well.

It is important to get the consistency just right. Don't add too much water. Add water in small steps.

Slice the Onions

Now comes the best part, the onions. The shape of the bajji is totally dependent on the way the onions are cut. The best way to cut them is to make them into thin slices.

First, peel the onions and give them a nice wash.

The reason why washing the onion is recommended is so that all the sulfur content in them are dissolved in water. This will prevent your eyes from watering when you are slicing them.

Now add the sliced onions into the batter and mix well.

Oil in a Pan

Once the batter and onions are ready, the next step is to deep fry them.

Heat up some oil for deep frying the onions. This oil can be reused, so be generous with it.

Don't heat the oil too much because the baijis might get over roasted and the taste might turn out bad.

Once the oil is heated up, the dipped onions are put into the oil and deep fry it.

Once the baiji's turn golden amber in color, remove them from the oil and place it on to some paper napkins to remove excess oil.

That's it!! Now you have some awesome crispy onion bajjis.

These bajjis can be served with some green chutney, coconut chutney, or with your favourite ketchup.

This is by far the best combination to enjoy with hot tea.
