Crispy Chinese Sesame Flatbread
I miss a lot of Taiwanese food after I studied abroad. It used to be easy and convenient to grab food anytime when you want to eat. The crisply Chinese sesame flatbread (we call it shaobing, 燒餅) is one of my favorite breakfast or night snack in Taiwan. Usually, you can only have the authentic one in certain traditional breakfast vendors/restaurants. They opened around midnight and closed around afternoon in the other day, or even opened 24 hours. There are different choice of foods, but shaobing with green onion eggs inside is a must! Besides, I strongly recommend eating with soy milk! Here, I would like to share how to be a copycat of shaobing to ease my "home food sick". I tried to make it a few times already and I found it's actually not too hard. Hope the instruction below and the video help you if you want to make this delicious bread!
Supplies
The ingredient for 16 bread:
- Dough
- All-purpose flour 4 cups
- Lukewarm water 4/3 cup
- Instant yeast 1.5 tsp
- Pastry
- All-purpose flour 3/2 cup
- Butter (soften) 9 tbsp
- Salt 2.5 tsp
- Topping
- Black sesame
- white sesame
- Green onion eggs
- half bunch of green onion (minced)
- 3 eggs
- sesame oil 1/2 tsp
- salt
- white pepper
Dough
- Mix water and yeast
- Mix liquid and flour
- Knead less than 10 min (You can use this time to prepare the pastry, see step 2)
- Knead again
- Cover with kitchen towel and rest for 1 hr under 25C
- Shape the dough and separate it into 16 pieces
Pastry
- Mix all ingredient together
- Shape it and separate it into 16 pieces
- Make those small pieces small balls
- Save in container or wrapped, avoid drying out
Together
- Wrap the pastry in the flour dough into a ball
- Roll the dough in a longer shape
- Threefold and roll, repeat twice
- Threefold again
- Spread sesame on the top
- Roll it with sesames
- Heat up oil in a pan
- Fried the bread with median heat
Fry Green Onion Egg
- Minced green onion
- Beat the eggs
- Mix eggs and minced green onion
- Add some spices (salt and white pepper)
- Heat the oil in a pan with median heat
- Pour the eggs into the pan
- Flip it when it's shaped, slightly brown
