Crema Di Mortadella

the italian sausage speciality mortadella is one of my favourites.

eat it thinly sliced on a piece of crunchy buttered white bread and you're in heaven!

but since even the best things can get boring, here is another way to enjoy this wonderful sausage:
as a creamy spread that makes the perfect little appetizers when piped onto crackers or can be enjoyed just as good on a slice of whole grain bread at breakfast.

it is very easy and quick to make and incredibly tasty....

You Need:

- a 300 g slice of mortadella (about 1cm thick slice from a big mortadella)---
- a handfull of pistachios
- 200 g of cream cheese
- 1 tablespoon of mustard
- 100 ml of cream
- 2 leaves of gelatin

Prepare!

soak the gelatin leaves in cold water for 5 minutes.

shell and chop the pistachios.

cut the slice of mortadella into cubes.

heat the cream in a pan, take away from the stove when it's hot and add the drained and soakes gelatin leaves.
stir well until all the gelatin has dissolved.

Blend!

put the mortadella cubes, the cream cheese, the mustard and the cream and gelatin mixture in a blender or mixture and mix until creamy.

add the chopped pistachios and season with salt and peper. put the finished cream into jars and refrigerate for 2 hours before using.

the crema di mortadella will stay good in the frigde for about a week.

after cooling, enjoy your crema di mortadella on a slice of bread, prepare it as a canapé or use it as a dip with crispy bread sticks.

if you want to try a different version, use ricotta instead of cream cheese or add some green peppercorns.
