Creepy Chocolate Chip Cookies
Comedian Gary Gulman did a sketch years ago about cookies. (It's hilarious, you should look it up.) At the end of it Gulman expresses how much he dislikes sugar cookies because they are always trying to be something else and without changing they are just boring sugar cookies. If there is to be a close second to the sugar cookie it would definitely be the chocolate chip cookie. It has been reinvented in a million different ways in a million different recipes...BUT they are never (okay, maybe rarely is a better word) decorated. I'm changing it up and decorating chocolate chip cookies for Halloween!
Chocolate Chip Cookie Recipe
This recipe happens to be gluten-free, but don't worry, all the flavor is there and they are still delicious. Super soft and chewy too!
Chocolate Chip Cookie Recipe
- 6 tablespoons butter, softened
- 1/3 cup almond butter
- 1/4 cup coconut sugar
- 1 chia egg (1 tablespoon ground chia + 3 tablespoons water)
- 1 1/2 teaspoons vanilla extract
- 1 cup almond flour
- 1/3 cup GF oats
- 1/4 cup coconut flour
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/2 cup dark chocolate chips, roughly chopped
Preheat oven to 350° F and line a baking sheet with parchment paper.
In a small bowl combine ground chia and water. Set aside.
In the bowl of a stand mixer cream butter and almond butter. Add chia egg and sugar. I only use 1/4 cup sugar but you could add more if you like your cookies sweeter.
Add remaining dry ingredients and mix to combine.
Spoon & Bake Creepy Cookie Base
Using a 1 1/4 inch cookie scoop, scoop batter onto parchment lined baking sheet and flatten slightly. These cookies will not spread so make them as large or as small as you want the final cookie to be.
Bake 8-10 minutes. Cookies will be soft.
Decorate Cookies to Make Them Creepy!
I used the following items/ingredients to decorate the cookies:
- sugar pearls (large and small)
- slivered almonds
- food coloring markers (red and black)
- ball head sculpting tool
- red gel food coloring and small food safe paint brush *optional
Make an indent where you want the eyes and mouth to be. I worked with my cookies warm so the dents didn't turn in to cracks.
Using the black marker color in the holes.
Press sugar pearls in the indents for the eyes.
Break almond slivers into teeth like shapes and press into the mouth as desired.
Using the red marker color the teeth to look like blood. On some of the cookies I wanted a more bloody look and chose to use gel food coloring and a paint brush to get a more dramatic look!
