Creamy Pumpkin Soup (Easy & Cozy Fall Recipe)

Supplies
1 cup chopped onion
1 garlic clove
6 cups (1.5 L) vegetable broth
2 lb (1 kg) pumpkin
½ cup cream
2 tbsp olive oil
Salt and pepper to taste
Peel and chop one onion and a few cloves of garlic.
Cut your pumpkin in half, remove the seeds, peel off the skin, and slice the flesh into cubes.
Add the pumpkin cubes, sprinkle with half a teaspoon of salt, and sauté for about 10 minutes.
Pour in vegetable broth and cook for 10–15 minutes, until it becomes soft.
Remove from heat, let cool slightly, and blend until smooth.
Stir in some cream for extra creaminess.
Serve warm with croutons or pumpkin seeds on top.
