Creamy Melon/Watermelon Popsicles W/ Fruit
In this Instructable, you will learn how to make melon/watermelon ice cream popsicles with a slice of watermelon and "seeds"! The melon rind prevents dripping, and the fruit is also edible and yummy!
These recipes were made through experimentation, so you're welcome to test with your own ingredients.
Supplies
For Melon:
- 1 honeydew melon
- 1/2 cup yogurt
- 1/4 cup condensed milk
- Some milk
- Granola
- Coconut milk (optional)
For Watermelon:
- 1 watermelon (you just need the middle slice)
- 1/2 cup yogurt
- 1/4 cup condensed milk
- Some guava juice
- Granola + Raisins
- Red fruits/jams/juice (for example, we used lingonberry jam and guava juice)
Cut Melon
Wash then cut out two circular slices from the center of the melon and a bowl shape from the end.
Remove Seeds
Wash out the seeds.
Cut Out Inside Melon
Cut out the outside ring of the circles. Scoop out the inside of the bowl.
The more melon you leave on the rind, the more fruit will be on the popsicle.
Chop Melon
Chop the melon into chunks.
Place Melon & Popsicle Sticks
Place the melon on a foam or plastic plate.
Use a knife to cut 3 evenly spaced cuts in the outside, and stick popsicle sticks in.
Ingredients
Add chunks of banana into the blender
Add 1/4 cup condensed milk, 1/2 cup yogurt, and enough milk to cover the bottom of the fruit. We also added some coconut milk.
Blend until the mixture still has some small pieces of fruit, or to your desired texture.
Granola "Seeds"
To simulate the honeydew seeds, add granola and/or oats to a bowl. Crumble into smaller pieces if necessary.
Pour Mixture
Pour the honeydew mixture into the center of the rings. Top with the granola/oats in the center. Repeat for the bowl.
Freeze
Freeze for a few hours.
Bonus: Other Ideas for the Rest of the Mix
- You can freeze the melon ice cream in other molds, like a popsicle mold or an ice cube tray. However, try to make sure to have a popsicle stick, or put the ice cream in a bowl, because it melts if you try to eat it with your bare hands.
We tried filling a banana with the mixture. We hollowed out the banana with a straw, added the banana to the melon mixture, and filled the banana with the melon mixture. It didn't work too well, as the banana broke and leaked, even though we wrapped plastic wrap around it.
- You can freeze a large, thick chunk (like a cake) and give everyone a slice.
- You can drink the mixture as a smoothie.
Serve
To serve, cut the popsicle into thirds. Enjoy!
Recipe 2: Watermelon
We also tried using a watermelon to make a popsicle mold. It's hard to find a good plate to put it in (because watermelons are big). We used the lid of a food storage bowl but that turns out to be too soft without support. We spilled a lot when moving the filled watermelon into fridge and that is a lot of clean up to do :( We end up support it with a chopping board in our second attempt. If you have one of those round cooking sheet with lower rim, that would be ideal! Or you can skip the popsicle sticks and eat it directly as watermelon slices--that will make the job much easy!
Find any red fruits in your house (For coloring purposes). We used:
- Watermelon
- 1 Banana
- 1/4 cup Lingonberry Jam
- Guava Juice
- 1/4 cup Condensed Milk
- 1/2 cup Yogurt
- Granola + Raisins (For the "Seeds")
Follow the instructions for the melon popsicles. Because the watermelon is bigger, there is space for 8 popsicles instead of 6. At the end, sprinkle granola or resin on all the watermelon, not just the center.
We added an extra guava juice layer at the end.
