Creamy Butter Tofu
Cruelty free and much more tastier option for Butter Paneer. Nightmare for every Vegetarian turned Vegan is to find a substitute for Cottage Cheese or Paneer. But once you Discover Tofu there is no looking back. Butter Tofu is one of many delicious dishes you can make with Tofu.

Serves : 3-4 Tastes best with : Roti, Naan, Rice dishes
Ingredients : Firm Tofu : 1 package ( 420 g ) , cut into cubes or desired shape Mixed nuts : 1 cup ( I used Almonds, Cashews and Peanuts ) Almond Milk : 1 cup Tomato : 1 , medium size Vegan Butter : 1 Tbsp , for cooking And 1 Tbsp, for garnishing ( optional ) Oil : 1 Tbsp Ground Ginger : 1 1⁄2 tsp Cardamom : 5 Bay leaves : 2 Red paprika / chili powder : 1 tsp salt : to taste Turmeric powder : 1⁄2 tsp
Method : 1. Wrap Tofu in paper towels, press to release extra water . Cut them into shapes and set aside. 2. Heat 1 Tbsp oil in a skillet , add Tofu, sprinkle little salt and fry until they get slightly brown on each side. Remove from skillet and set aside. 3. In a spice grinder, put nuts, Tomatoes, ginger powder , Milk and Cardamom . Grind them in high speed until these become smooth paste. 4. Melt 1 Tbsp butter in a pan. Add bay leaves and prepared nut paste. Season with salt, turmeric and red paprika . 5. Add fried tofu , mix well and cook for about 8-10 mins. You can add little water if the gravy gets too thick and starts sticking on the bottom. 6. Switch off the flame and garnish with 1 Tbsp of butter on the top ( optional )
Note : If vegan butter is not available, you can always substitute with oil as the nut paste and almond milk is enough to bring out the creamy texture on the gravy .
