These mints are easy to make and great tasting. Make them for baby showers, or bridal showers, for guests after a dinner, or even for your kids to use as an edible play dough!

Ingredients

4 oz. of neufchatel cheese or cream cheese
2 1/2 to 3 cups Powdered sugar
1/8 tsp. Peppermint extract
Food coloring (optional)

Mixing Sugar and Cheese

Put two cups of powdered sugar in a bowl. Then add the neufchatel cheese. Mix until you can make it into a ball that is slightly tacky. Add sugar as needed. (This can also be mixed with an electric mixer, kinda wish that is what we did :))

Adding Flavor

Add 1/8 tsp. peppermint extract. Mix in the peppermint. If you do not mix it well some parts will be bland and others too powerful.

You can add any flavoring you want; vanilla, cherry or almond. If you change the flavor it won't really be a mint.

Kneading

Create a bed of powdered sugar. Place the ball on the bed and knead it. Add powdered sugar if the ball starts to stick to your surface. Knead it until the ball is no longer sticky. If using an electric mixer this step is unnecessary.

Cutting

Roll the dough into a log. Cut half an inch slices from the log. You can make them bigger or smaller if you want. Lay them out on a plate. You can press them into a candy mold if you want. We did not have a candy mold so we left them round.

After your mints are cut let them air dry overnight. They will be dry on the outside, but still moist on the inside.

Adding Color (Optional)

You can leave the mints white, or you can add color. Use a gel food coloring. Apply a small amount of color using a toothpick. Then mix it thoroughly. Experiment with different colors and twisting techniques, the possibilities are endless. We had some turn out with with a tie-dyed pattern.
