Cranberry Pumpkin Bread
Of course this is the time of year for pumpkin everything, but also cranberries are all the rage! So, I was thinking, why not combine the two and make an awesome, yummy bread!?!?! I did some searching around and found that a lot of recipes called for MASSIVE amounts of sugar! I couldn't believe it, there is no need for all that sugar! So, I went into the kitchen and decided that I wanted to put something together that was not only yummy but wasn't mostly sugar.
Mixing the Dough
Whisk together 1 1/2 cups flour, 1 tsp. baking soda, 1/2 tsp. salt, 2 tsp. cinnamon, 1/4 tsp. allspice, and 1/4 tsp. nutmeg in a small bowl. In a larger bowl, beat the 3/4 cup sugar, 1 cup pumpkin, 1/2 cup oil, 2 eggs, and 1/2 cup orange juice until thoroughly combined. Slowly add in dry ingredients and mix.
Adding the Cranberries
Fold in cranberries and pour into a greased loaf pan.
Bake and Finish
Bake at 350 degrees for 1 hour, but check it after about 50 minutes to make sure it isn't done. I checked mine then and it was needed longer, but I live on the coast and it is very humid here.
